RECIPE: Strawberry and Coconut Gluten Free Muffins

This recipe makes about 12 muffins and they disappear in about 30 minutes in our house, everyone loves them!
Strawberry and Coconut
INGREDIENTS

3/4 punnet strawberries chopped (or mixed berries)
1/2 cup quinoa flakes
1/2 cup desiccated coconut
1 tspn chia seeds
1 tsp baking powder (gluten free)
1 tsp salt
3.5 tbspn coconut/maple syrup
2 tbspn olive oil
2 eggs
1/2 tspn vanilla paste
1/4 cup cacao nibs (optional)

 

PREPARATION

1. Mix all dry ingredients

2. Mix all wet ingredients.

3. Combine wet and dry ingredients together. Mix will be quite runny, pour into muffin moulds.

4. Cook at 160C for 20-25mins. Remove from oven, cool and enjoy.
