Christmas Recipes

I also recently had a Christmas party at my house and I was asked for some of the recipes so I thought I would share them with everyone. Unfortunately I forgot to take photos and everything was eaten, so there aren’t any pretty pictures to show.

Many of these recipes are thermomix recipes but they can be easily adapted

Double Chocolate Truffle Ice Cream – the yummiest dairy free ice cream around by Jo Whitton from Quirky Cooking.  I use the recipe from Jo’s blog click here to check it out.  I use Coconut Nectar or Maple Syrup instead of Xylitol.

Glazed Christmas Ham – this one comes from Pete Evans Family Food book

3/4 cup honey
Zest and juice of orange
1.5 tsp a mustard powder
1.5 tsp ground cinnamon
1/4 tspn ground cloves
1/4 tspn ground nutmeg
1/4 tspn allspice
3 tblspns water

Lift skin off ham and score.  Make glaze by mixing all ingredients together and spread glaze over ham.  Bake ham regularly basting with juices.

Coconut Cherry Fudge (White Christmas)  – from Quirky Cooking by Jo Whitton

Coconut butter
400gm desiccated coconut
30gm coconut oil
Place coconut into bowl. And blend 2min/speed 8, or until like a paste
Add coconut oil and blend 1min/speed 5-8 until smooth consistency formed

1 batch coconut butter (above)
1 tsp vanilla bean paste
50-100gm maple syrup
Pinch salt
80gm mixed dried fruit

Mix all ingredients together
Place in lined baking dish, smooth out and set in fridge.  Cut into squares once set

Chia and Almond Bread – from Food We Love by Tania Hubbard (grain free bread)

1 cup almond meal
2 tblspns chia seeds
30ml water
3/4 cup tapioca/arrowroot flour
1 tspn bicarbonate soda
2 tblspns Apple cider vinegar
3 eggs
Pick of salt

Preheat oven to 175C
Soak chia seeds in the water
Sift tapioca and bicarb soda, add almond meal and salt and mix well
Add eggs,soaked chia and apple cider vinegar
Mix everything together well, the mix will be thick
Pour into loaf tin lined with baking paper
Bake for 25mins until bread is firm to touch and bounces back when touched
Allow to cool
Loaf will drop slightly once cooled
Serve with butter

Cashew Cheese – another one from Family Food by Pete Evans

Cashew cheese Family Food Pete Evans
320gm cashews soaked overnight
1-1,5 tblspns lemon juice
1 tspn salt
place soaked nuts in food processor with lemon juice and salt add 120ml water and process for 1min until smooth.  Add more water if required

Raw Chocolate – one of my favourites

½ cup coconut oil

½ cup cacao powder

¼ cup raw honey/maple syrup/coconut nectar

Melt coconut oil in a basin over very warm water. Combine with cacao powder and sweetener and mix well. Taste and adjust the sweetness if necessary.  Pour into baking tray, place in freezer for 15-20mins to set.  Cut into squares once set.


2-3 drops of peppermint oil for mint chocolates

Chopped nuts for a nutty chocolate

Dried craisens, cranberries, dried berries for fruit chocolate
